This is the same manual the DOP uses to bless Aceto to be labeled "Tradizionale Balsamico di Modena" . Centuries of pride and tradition goes into every bottle of Aceto Balsamico. The product offered is Balsamic Vinegar di Modena. This artisanal balsamic vinegar is made in the same traditional methods as 12 & 25 Year aged Traditional Balsamic Vinegar di Modena, but are lacking one variable to be Aceto Balsamico Tradizionale - e.g. they do not use all 5 prescribed wood barrels, but a minimum of 3 barrels over an aging period of at least 3 years (it must be aged for at least 3 years to be called Vecchio "Aged" and must be in a 250ml bottle). This Balsamico uses Grape Must and a small amount of high quality Wine Vinegar from Trebbiano grapes. There is no caramel coloring or any thickening agents added. This Balsamico has a fantastic sweet & Tart flavor, with syrupy consistency similar to our Tradizionale Balsamic Vinegars. A great inexpensive alternative to a Tradizionale.
