It was in 1973 that the Pelloni family opened the "AL CASTELLO" restaurant in the medieval setting of the Piazza della Dama in Modena. Mario Pelloni was not born a restaurateur, but his previous profession was linked to foods, and thanks to his wife's love of cooking and the cooperation of his daughter Roberta and son-in-law Marino, he made a success of the venture by offering dishes prepared in the genuine local ways now unfortunately on the verge of extinction. The items on the menu are mainly based on the traditional cookery of the Modena region. Balsamic vinegar takes centre stage in the output of LA VECCHIA DISPENSA since the company considers it the resulting jewel of its labors. It is still made in the traditional way, by fermenting the must of Trebbiano grapes in barrels of costly woods - oak, mulberry, chestnut, cherry and juniper - which over the years gradually give the vinegar its inimitable fragrance and flavour. The process continues with simple but clearly defined procedures that must be carried out in exactly the right sequence, at the best times and in the best places. However, skilled vinegar makers have their own secrets, handed down by word of mouth from generation to generation. The ageing process gives balsamic vinegar the characteristics that make it truly unique. This complex, delicious organic balsamic vinegar is made from the combination of cooked grape must that has been aged with high quality, aged wine vinegar. With 6% acidity, it is perfect for salads, and grilled vegetables.

This ingredient may seem a bit unusual, but it is a traditional preparation from southern Italy. This distillate is a fish sauce extracted from cured anchovies. Each batch takes five months to produce. Featured in the Wall Street Journal's Guide to the Best in Summer Food (May 14, 2011), Lidia Bastianich says, "...It has the effect of umami and it brings out flavor in everything you do..." Ittica Alimentare Salerno (IASA) uses only premium anchovies harvested in the Mediterranean. IASA is located in the small village of Cetara, south of Naples, on the Amalfi coast. They have been processing freshly caught anchovies since 1969. One of the treasured ingredients of the region, Colatura di Alici, has roots that date back to ancient Rome. Until recently this ingredient was rarely found in the United States. Colatura di Alici is recognized and protected by Slow Food. Traditional suggestions include using a small splash of colatura with browned garlic, chili flakes, extra virgin olive oil, parsley, and toasted breadcrumbs on pasta. Another lovely pasta dish is orecchiette with cauliflower, garlic, chilies, raisins and pine nuts and a hint of colatura. Also a favorite with dishes such as steamed broccoli, braised sea bass, or substituted for anchovies in Caesar salad. Always start with a small splash!

The process begins with the harvest of Palomino grapes grown near Jerez, Spain, and a series of barrels called criaderas. Each criadera contains vinegars with similar flavor characteristics, but that have been aged for different lengths of time. When the solera, the barrel with the oldest vinegar, is tapped for bottling, it is never fully drained. Instead, the remaining vinegar is then blended with vinegar from the next younger criadera, and so on through the series of bottles until the youngest is topped off with fermented must.
