Made from Pineau de Charentes, a traditional French aperitif prepared by adding young Cognac to the unfermented juice of Charentes grapes, then aged in oak-tree barrels for four years. A cook by trade, Françoise Fleuriet wanted to customize her condiments. In 2003 she came up with the idea of creating her own vinegar from the local Pineau des Charentes liqueur wine, an innovative experiment that no one had ever tried before. Her vinegars have won several French awards and have been adopted by French starred-chef for their creations.
