White Miso is fermented for a shorter duration and with lower amounts of salt compared to Red Miso. Its flavor is milder and pairs more easily with other flavors, making it very versatile. Miso is a traditional Japanese food produced by fermenting rice, barley and/or soybeans, with salt and the mold, kojikin.
