Some Native American tribes regard the bean as a sacred plant. Many parts of the plant are edible such as the pods (for green beans), beans, starchy roots and edible flowers that are bean-like in taste. The scarlet runner bean was first introduced to Europe in the 17th century and for 120 years was grown as a decorative plant, for garlands and posies and for covering balconies and defects in fences. Since the mid 18th Century the beans have been grown for their succulent pods, and are still one of the most popular fresh beans in England. Dried Scarlet Runners are also popular throughout Europe. They are larger than the members of the kidney bean family, closer in shape to elongated limas. Their color deepens when cooked, and they will almost double in size, creating a wonderful presentation. They are perfect for both hot and cold preparations, and they go exceptionally well with potatoes or pasta, especially when olive oil and fresh herbs are involved. They are also good substitutes for recipes calling for cranberry or pinto beans.
