These tomatoes were picked at the peak of ripeness, then basked in the hot Spanish sun for several days. La Cuna takes no shortcuts - they don't use an oven to mimic the sun's heat. The result is amazing - sweet and tart tomatoes with just the right texture. Whenever a recipe needs a blast of flavor, we reach for a few slices of these tomatoes - everything from salads to roasted chicken to canapés. One of our favorite pairings is with fresh goat's cheese and chives on a toast round - simply delicious. The artisans at La Cuna slice fresh ripe tomatoes into quarters and lay them out on pans in the sun, rotating them every few hours to make sure they dry evenly. After several days they are completely dry. They are then soaked in cool water for 12 hours. They are then patted dry and placed in jars with olive oil and oregano, ready for you to enjoy at home! La Cuna is translated as "The Cradle" in Spanish, named to remind the owners of their mission: to bring to life the recipes they remember from their childhoods, taking great care and patience with each product to bring out the best in every ingredient. Store the jar in a cool, dark place like your pantry. Once opened, store in your refrigerator. Note that the olive oil will congeal in the fridge. Allow to warm before serving, or place the jar in warm water to speed up the process.
