Shepherds from the Garfagnana mountains, Allessandro & Remo Busti , began their dairy in 1955 in Fauglia in the province of Pisa in Tuscany. "I Formaggi della Famiglia Busti" remains family run by Stefano Busti and his son and daughter. Their selected ewe's milk comes from certain areas of production in Tuscany that are known for the quality of their pastures, such as Pienza and Siena, Val d'Orcia, the province of Grosseto, the hills of Pisa and Livorno, the area along the Tyrrhenian coast - from Vada to Suvereto - and the Migliarino - San Rossore - Massaciuccoli Park. The careful selection of milks and the working methods have not changed over the years. Their line of Le Delize cheeses are produced from the combination of their excellent Tuscan pecorino and traditional ingredients carefully selected from authentic areas of production in Italy. In this case, they have selected pesto with Ligurian P.D.O. basil in order to obtain the greatest flavors. Add National pine nuts to this young, fresh sheep's milk cheese and you have a tingly, pesto taste.
