Imported Italian Wine Vinegar Perched on the steep Eastern hillside in the Trentino region, Pojer e Sandri is one of the most remarkable, unique, and trend-setting wineries in Italy. The dynamic team of Fiorentino Pojer and Marco Sandri have owned the estate since 1978, when Fiorentino as the landowner teamed up with Marco who had just graduated from enological school. Fiorentino and Marco have been producing very aromatic white and red wine vinegars in the traditional slow percolating process and then aged in oak-barrels, much as it is done with wine. Using a blend of local grapes (Negrara Trentina, Groppello, Lagrein, Merlot, Cabernet Sauvignon, and Pinot Noir), this red wine vinegar has a body reminiscent of a great Pinot Noir. This medium-bodied vinegar has autumn foliage notes with scents of mushrooms, dry leaves, and a woody finish. Ideal for use in making salad dressing for hearty salads, grilled vegetables, and deglazing pork or meat roasts and add a bright tone to cured meats or stews.
