Colatura di Alici from Campania Italy
Manufacturer: Ittica Alimentare Salerno (IASA)
Brand: Colatura di Alici
This ingredient may seem a bit unusual, but it is a traditional preparation from southern Italy. This distillate is a fish sauce extracted from cured anchovies. Each batch takes five months to produce. Featured in the Wall Street Journal's Guide to the Best in Summer Food (May 14, 2011), Lidia Bastianich says, "...It has the effect of umami and it brings out flavor in everything you do..." Ittica Alimentare Salerno (IASA) uses only premium anchovies harvested in the Mediterranean. IASA is located in the small village of Cetara, south of Naples, on the Amalfi coast. They have been processing freshly caught anchovies since 1969. One of the treasured ingredients of the region, Colatura di Alici, has roots that date back to ancient Rome. Until recently this ingredient was rarely found in the United States. Colatura di Alici is recognized and protected by Slow Food. Traditional suggestions include using a small splash of colatura with browned garlic, chili flakes, extra virgin olive oil, parsley, and toasted breadcrumbs on pasta. Another lovely pasta dish is orecchiette with cauliflower, garlic, chilies, raisins and pine nuts and a hint of colatura. Also a favorite with dishes such as steamed broccoli, braised sea bass, or substituted for anchovies in Caesar salad. Always start with a small splash!

Campari Balsamic Vinegar of Modena, Aged 15 Years
Manufacturer: Campari
Brand: Campari
This precious balsamic vinegar arises from Lodovico Campari's passion for Modena and its origins. Trebbiano grapes are picked at their peak ripeness and the must that is obtained is then left to ferment in open top vessels. Once the cooked must has reduced by two thirds, it is then put in oak barrels where it stands in the dark of the "attics".From one year to another, Lodovico Campari's Balsamic Vinegar is transferred from one wood barrel to another, drawing distinctive and unmistakable aromas from each different kind of wood, from cherry to juniper. The Balsamico is then left to the generations experienced master tasters to decide its readiness. The deep sapphire color, the limpidity, the thick velvety texture and the deep contrast between its initial sweet element and its final acidulous one, makes Campari's Aceto Balsamico one of the true jewels of Modena. It is perfect used as a condiment for meat, fish, vegetables and aged cheeses. For a unique and special treat, try it over strawberries and ice cream. Each bottle contains 8.5 fluid ounces (250 ml.) of Aceto Balsamico di Modena aged 15 years by Acetaia L. Campari from Italy.

Fondo di Trebbiano White Balsamic, Aged 4 Years, 8.45 Ounce
Brand: Fondo di Trebbiano
Fondo di Trebbiano White Balsamic, Aged 4 Years, 250 ml This extraordinary white balsamic starts with fresh pressed Trebbiano grape juice that is strained to remove any skin or seeds from the grapes. This straining process is what gives this balsamic its beautiful dark golden color. The juice is then placed in "piccolo" or small oak barrels with specially selected cultures that gently ferment the juice into vinegar over a period of four years. This small barrel aging produces a vinegar with vibrant acidity and sweet flavor with hints of vanilla and smoke. Use this vinegar to add flavor to roasted fish and vegetables or to add a zesty flavor to fresh cut fruit and salad. This balsamic vinegar can also be used in pastries such as custard and sabayon and salads.
