Chinkiang Vinegar (Chinese: 镇江香醋; pinyin: Zhènjiāng xiāngcǜ) is a major brand of black rice vinegar originating from the city of Zhenjiang, Jiangsu Province, China. It has five notable properties and characteristics: color, fragrance, acid, alcohol, and density. It is made by adding acetic acid and bacteria to glutinous rice, its main ingredient. It then undergoes three steps: alcohol fermentation, acetic fermentation and vinegar rinsing.[1] Brewed from high quality glutinous rice. With its rich and sophisticated flavors and aromas, it is ideal for sweet and sour dishes, as a dipping sauce or dressing for steamed crabs, cold dishes and dumplings. This caramel-colored vinegar is milder than Western vinegars. It has a salty, slightly acidic flavor. Ideal for rice, marinades, and noodle salads.
