The Tamarisk tree survives in an environment that is brutal for other nectar producing plants. In the middle of the summer as the desert heat climbs to over 115 degrees F, most of the honey bees' other food sources dry up. The Tamarisk thrives in this hot weather and begins the process of attracting pollination bees with its rich sweet nectar. Tamarisk honey is a dark and savory honey with a deep nutmeg color and golden highlights. It has tastes of malt and molasses topped with overtones of citrus - and not excessively sweet.
