As a small family business, we purchase our honey and pollen in bulk from Mojave Desert bee farmers, most of whom have farmed for generations. We repackage the bulk into ecological containers for our community to reuse (i.e. mason jars and recyclable squeeze bottles). Our philosophy is to support our customers and not compete with them ~ therefore, we ask that you purchase from one of the many stores that currently carry our product line and only contact us directly if interested in buying in bulk (i.e. 60# containers). Tamariskare trees usually found in deserts, characterized by slender branches, grey-green foliage and clusters of small pink flowers. Tamarisk blossoms are a wonderful nectar source for bees for honey-making. This rare honey is produced primarily in the salt marshes of the Mediterranean. The Tamarisk tree survives in an environment that is brutal for other nectar producing plants. In the middle of the summer as the desert heat climbs to over 115 degrees F, most of the honey bees' other food sources dry up. The Tamarisk thrives in this hot weather and begins the process of attracting pollination bees with its rich sweet nectar. Tamarisk honey is a dark and savory honey with a deep nutmeg color and golden highlights. It has tastes of malt and molasses topped with overtones of citrus - and not excessively sweet. In fact some say there is even a hint of a soy sauce taste! This honey is best for pairing with blue cheeses like Roquefort, Gouda or Chevre goat cheese.
