The Greek table black olive Throumba Thassou is registered PDO (Protected Designation of Origin) by the European Commission with dossier number : EL/PDO/0017/0351. The olive loses it bitterness at the tree and the only processing that exists is the addition of sea salt. In research done in comparison with other Greek table olives, contains higher levels of Oleuropein which has antioxidant,bactericidal and bacteriostatic action
