Established in 1924, Cardini's began to make high quality speciality salad dressings, light salad dressings and croutons. Cardini's base themselves around the story of the Caeser Salad. The company aims to create products to match the standard and great taste of salads to enhance the flavours and make a more enjoyable salad. Today, Cardini's still strive to maintain that delicious taste.  With a huge variety of dressings it's hard to be disappointed, as each dressing is unique and there is enough of them to please everyone. With only 80 calories per serving, Cardini's Light Caesar Salad Dressing is full of the same rich flavour but easier on the waistline. Caesar salad is - romaine lettuce and croutons dressed with parmesan cheese, lemon juice, olive oil, egg, Worcestershire sauce, garlic, and black pepper. The salad's creation is generally attributed to restaurateur Caesar Cardini, an Italian immigrant who operated restaurants in Mexico and the United States.  Cardini was living in San Diego but also working in Tijuana where he avoided the restrictions of Prohibition.  His daughter Rosa (1928–2003) recounted that her father invented the dish when a Fourth of July 1924 rush depleted the kitchen's supplies.  Cardini made do with what he had, adding the dramatic flair of the table-side tossing "by the chef."
