Our Terra Creta Estate Extra Virgin Olive Oil is produced from olives cultivated on the Terra Creta Estate farm located in the sunbathed mountainous and hilly olive-groves of the island of Crete. Acidity, waxes, and other defining chemical attributes of this Extra Virgin Olive Oil never exceed 50% of the maximum allowance of these elements under the regulations set by the European Union. Terra Creta Estate Extra Virgin Olive Oil, has a gold-green hue, with a balanced taste and a long lasting smooth aftertaste. The wonderful fruity aroma, with hints of pear and almonds is due to the "Koroneiki" variety used in this extraordinary olive oil. The traditional methods followed during the harvest of the olive coupled with the modern processing and storage ensure its particular characteristics and its outstanding quality. . . Terra Creta still uses traditional harvesting methods where farmers lay large, rectangular nets under the trees and use slender, hand-held poles about the size of a broom handle, to gently loosen the olives allowing them to fall into the nets below. This provides sustainability for the trees and reliability to farmers for generations to come. But Terra Creta uses a unique, technologically advanced and efficient olive oil mill that can process olives into olive oil within 45 minutes of receiving the olives at the mill. Since the olives are processed the same day they are harvested, the oil remains very low in acidity and retains its health benefits and distinctive taste.
