In the South-east end of Louisian, tucked into the watery bayou, if you are very clever you will find Cajun Country. Had it not been for a disagreement between the British and the Nova Scotians in the 1600's, resulting in the French people being expelled from the area for placing their sympathies on the wrong side, it is impossible to say whether there would have been Cajun country in Louisiana. So thousands of Frenchmen made the journey south to Louisiana to start a new life. They were hard working people who set about establishing sugarcane and rice farming along with trapping, their first love. In time they intermarried with the local Spainards and Indians of the area. This region bears a reputation for fine, if not spicy, cuisine and superb plantation homes. Enjoy this as a main dish or serve with blackened catfish, poultry or meat. Have coffee and beignets for dessert.
