What's the difference between cultivated and non-cultivated wild rice? Most of the rice that is available in grocery stores across the country is referred to as paddy rice. This type of rice is grown similar to brown rice in rice paddies. It cooks uniformly, and is consistently the same year after year because it is cultivated rice. This type of rice is actually a hybrid developed by the University of Minnesota. It is for this reason that many people do not like true wild rice. Natal brand wild rice is non-cultivated. Our wild rice is grown wild in the North-Central Minnesota lakes. The rice is hand picked using a canoe and wood parched using methods long ago perfected by the American Indians of the area.

Our Northern Minnesota wild rice is Native American hand harvested the old way, in a canoe. This traditional gathering rite has been used by our ancestors for generations. Please don't confuse this with paddy grown "wild rice"! They look and taste completely different! The much darker (often black) paddy rice is machine planted and machine harvested, resulting in a bland tasting rice that may take up to 3 times longer to cook and yields a lot less per pound. Many rice paddys are sprayed with herbicides. Our hand harvested wild rice grows naturally in the lakes and river beds on the Leech Lake Indian Reservation. This mouth watering nutty taste cannot be compared to the mass produced paddy rice. This wild rice was wood parched. By using this method versus propane (which drys the rice) our wild rice is left more moist, resulting in a fluffier, more flavorful, faster cooking rice. We do not mix are batches of wild rice! All the rice you recieve will come from the same lake or river bed. This insures even cooking and quality taste. The lighter color of wild rice indicates the best quality rice. Wild rice will keep forever if stored in a dry place. We will include recipes.

The key to crafting an exceptional wild rice dish is in the caliber of the kernels. From California's Fall River Valley, Trader Joe's Wild Rice thrives in the fertile clay soils, clean air and crisp waters that flow from Mt. Shasta. The rice grains are dark, slightly glossy, and uniform in length - all good signs of quality wild rice. We cooked up a batch and were rewarded with chewy bits of burst rice (a good thing!) that had a deep nutty and grassy flavor. They work closely with the growers to ensure consistent quality. A one pound makes between 16-22 servings.
