When looking for risotto rice, you'll always inevitably be faced with a dilemma: Arborio or carnaroli? Either one will do in a pinch, but there are differences. Carnaroli is grown in Northern Italy, and is very expensive and difficult to harvest, making it less available. It also has more starch, giving it a firmer texture and an ability to hold its shape more easily - meaning, it won't turn into a lump so quickly if you overcook it! It tends to make a creamier risotto, which most people love, and absorbs lots of flavor easily. Our carnaroli comes from Azienda La Gallinella, a family-owned farm in Piedmont, Italy, specializing in rice and polenta.

Located at the heart of the Po Valley, Cascina Santa Marta is a farmers' co-op committed to the highest standards of responsible farming. Carnaroli rice is grown and manually processed in the traditional way, then vacuum-packed with the addition of apples, dried porcini mushrooms, onions and spices. Directions for use: heat a chunk of butter and a drizzle of olive oil in a shallow saucepan, then pour the content of the jar. Let it toast for a couple of minutes on low heat, while stirring continuously. Add white wine and keep stirring until it's evaporated. Add hot broth, one ladle at a time, and stir occasionally until fully cooked (approximately 15 to 20 minutes). Finish with butter and Parmesan to your taste.
