The artisans at La Cuna slice fresh ripe tomatoes into quarters and lay them out on pans in the sun, rotating them every few hours to make sure they dry evenly. After several days they are completely dry. They are then soaked in cool water for 12 hours. They are then patted dry and placed in jars with olive oil and oregano, ready for you to enjoy at home! La Cuna is translated as "The Cradle" in Spanish, named to remind the owners of their mission: to bring to life the recipes they remember from their childhoods, taking great care and patience with each product to bring out the best in every ingredient. Store the jar in a cool, dark place like your pantry. Once opened, store in your refrigerator. Note that the olive oil will congeal in the fridge.
