Shiloh Farms Barley Grits are Hulled Barley cut into about 6 pieces per grain. These tiny chunks of the barley grain can be substituted in recipes calling for grits. They easily take the place of Hominy Grits. In 1942 a group of like-minded people gathered on a farm in Western New York and founded the Shiloh Community. Their common goal was to live and work together in health and harmony. To help support themselves and sustain their lifestyle they created a bakery and became known for their hearty, healthy all-natural products. Organic certification had not yet been invented. This was the beginning of SHILOH FARMS.

Grits are coarsely ground dried corn. Prior to being dried the hull and germ of the kernel is removed. The resulting "hominy corn" is often bleached prior to grinding. The larger of the ground kernels becomes grits and the finer is cornmeal (polenta).
"White stone ground grits - made the old fashioned way. Lakeside Mills has been producing stone ground corn meal products in North Carolina since 1736. Our history is long and rich. The mill was used to supply the Continental troops in the fields as well as Lenoir County during the Revolutionary war. During the Civil War, much fighting took place near the original mill site, located east of Kinston NC. The original mill site is situated on Kelly's pond, which is over 300 acres and was once a major recreation area with its fishing, picnicking, swimming and boating facilities."

Water ground southern white grits from a mill in operation for over 150 years. Buffaloe Milling Company, Inc located in Kittrell, NC was founded around 1854. Kittrell's Depot was located on the railroad connecting Richmond VA and Raleigh NC. Kittrell's Springs, 34 miles north of Raleigh in Vance County, was the site of North Carolina's first summer resort-a resort that became a makeshift Confederate hospital during the Civil War.

Farina is most often served as a breakfast cereal, but can also be cooked like polenta. Its name comes from the Latin word for meal or flour, which in turn traces to far, the Latin name for spelt, a type of wheat. Farina was the first genuine flour before milling stones.
