Roasted almond Oil is a little-used ingredient, but is quite delicious. Nutty and slightly bitter, it works very well with fatty duck or fishes such as salmon. Pressed in A L'Olivier's mill in Poitou, the nuts in this virgin oil are lightly roasted to give a rich almond flavour. |
