Petite Golden Lentils (Lens esculenta) are small firm, golden Lentils that are rounder in shape than many other types of lentils, which is one of the reasons it holds its shape so well when cooked. With a mild, earthly flavor and soft texture, this beautifully colored, tiny lens shaped pulse (the dried seed of any legume) has traditionally been used as a meat substitute.
