The buttery, nutty, toasted flavor of roasted butternut squash in a bottle. This oil is a delicious finishing touch. Just drizzle some on mashed or baked potatoes, roasted or grilled vegetables, pasta, risotto, or any other place you want. Though this oil has a high smoke point (425?F) that would allow it to be used as a cooking oil, it loses a lot of its flavor when subjected to high heat, making it best suited to dipping, finishing, or use as an ingredient in dressings. Believe it or not, this oil is made from seeds leftover from pre-cut squash sold to supermarkets. Instead of being thrown away, they are carefully roasted and expeller pressed to produce this amazing oil. Not only is this product made from a former waste product, the production process is zero waste - the seedcake left over from pressing is used in premium pig feed, while the particles filtered out of the oil are used as exfoliators in artisan bar soaps. Because butternut squash seeds yield so little oil (20% of their weight), each bottle contains the seeds of 10 or more squash.
