This risotto is mild, creamy, and lightly spiced with the nutty flavor of pumpkin. STOVE TOP DIRECTIONS: STOVE TOP (For an authentic decadent Italian cooking experience!) Sauté contents with 1 tbsp butter or olive oil in heavy saucepan, over medium-high heat for a couple of minutes. Add 1/3 cup of dry white wine and stir until it boils off. Add 2/3 cup of boiling water, do not cover and cook for 18 minutes, stirring occasionally. The rice to cook properly will absorb the water, so keep adding it when needed little by little, until the rice is done and with a creamy and rich texture. Your risotto is done when rice is tender but firm to the bite ("Al dente"). Remove from the heat and add grated parmesan and butter, to cream it up even more, stir well and let it rest for a minute, then serve right away. BUON APPETITO!
